What are you trying to accomplish with this PR?

Pretty straightforward : we're gonna use the gh-pages branch to host on GitHub Pages to make contributions clearer.

This PR remove the actual docs folder and rename the docusaurus folder to docs.

⚠️ Before merging this, we need to update the GitHub Pages settings to use the gh-pages branch in the repo settings page ⚠️
